Potatoes ‘s peels in batter fried
Ingredients: potato skins, oil for frying, 150 grams of flour, 3 egg whites, 1 teaspoon baking powder, salt.
Wash the potatoes, scratched with a brush, dry and remove the peel, leaving a little ‘under the potato skin.
To prepare the batter, sieve the flour, yeast and collect them in a bowl. Add little by little the egg whites, then the water necessary to obtain a creamy and smooth, stir well and let rest for half an hour, then season with salt. Heat plenty of oil in a frying pan for frying, potato skins and fold into the batter, drip and, a few at a time, fry for 5 minutes or until will be evenly browned. Drain, mash of a sheet of absorbent paper and serve hot on a plate.
